SWEET POTATO PONE

Serves 4 to 6

Pone can be made from cornmeal, sweet potatoes, yams, or gari, but my favorite recipe uses sweet potato. It can be eaten hot or cold, but I love it cold because the flavor of the ginger seems to become stronger. Pone can be served as a dessert with T.G. Lee cream, as an accompaniment to roast pork or poultry, or eaten hot or cold as a snack on its own.
